Elvira's farm store: Always one step ahead - With established concepts through the crisis

The concept of our truffle hunters from Elvira's farm store near Aschfeld is clearly ahead of its time - no wonder that the business even had to announce an order stop for a short period at the moment. In 2008, Katja Dallmann and her husband Markus took over the business founded by Katja's mother in 1997 and named after her.

As a farm butcher, the direct marketing business processes the meat from the farm run by Katja's father. Cattle and turkeys are reared on the organic farm, which even produces its own feed and where the animals live on pasture all year round. The butcher's shop obtains its pork from another regional farmer, which is why the business is completely independent of large-scale slaughterhouses. The sausages are produced without any additives or flavor enhancers. This guarantees fine aromas and pure taste, and it is precisely this difference that you can taste, says Katja Dallmann. In cooperation with a regional chef, ready meals such as goulash, bolognese or gravy are also made from the meat products produced in-house.

The farm store has been offering a home delivery service since 2007 and already supplies over 1,400 customers in and around Würzburg. Elvira's Bauernladen has been offering the Schlemmerbote service for more than four years. Ordered goods can be collected from a Schlemmerbote, which means that deliveries can also be made to places outside the regular delivery area. The Bauernhof-Flitzer, as the refrigerated van is also known, also delivers orders to the Talavera in Würzburg every Friday. Cohesion between the regional businesses is also a top priority in these difficult times: the delivery service also delivers products from the bakery in Aschfeld.

The farm store was converted into a pick-up station at the beginning of the year. An established concept that is proving to be a clear advantage in the current crisis. There is only one customer in the store at a time. Only pre-ordered goods are collected, which are paid for cashless - not only do customers keep their distance from each other, but staff can also take two steps back when handing over the goods. Customers can also find out about the products in the online store, which was completely revamped last year, and of course order directly.

Elvira's farm store is investing in the future by building a modern farm butchery that will safeguard agriculture and the butcher's trade and allows its customers to participate in the investment by purchasing profit participation rights.

This concept will be unique in the Main-Spessart region - own rearing, own feed cultivation, own farm butchery, own butchering, own marketing. So one thing is certain: we can learn a lot from Katja and her farm on our future truffle hunts.
