Trüffeljagd has always stood for the joint search for new, creative and promising concepts to secure the future of the butcher's trade. Unfortunately, this was not so easy due to the pandemic - so we at least offered you an online format that thrives on this idea. The Trüffeljagd digital talk brought together experts on a specific topic and our truffle hunters were also able to get involved.

Prof. Dr. Dr. habil. Manfred Gareis held the Chair of Food Safety at the Faculty of Veterinary Medicine at Ludwig Maximilian University in Munich. He has dealt with the topic of slaughter like no other. With an increasingly critical student body, the question arises more and more: What does the future of slaughter look like?

Prof. Gareis investigated the effect of stress before and during slaughter on meat quality. For example, in projects such as the mobile pasture slaughter of Land.Luft in Leberfing. The focus here is not only on animal welfare, but also on the mental health of humans - during the slaughter process as well as during consumption.

Gareis is an advocate of an approach that does not give priority to human health, but recognizes that it is embedded in a comprehensive system - with all its dependencies on animals and nature.

In the Trüffeljagd digital talk, he addressed the following questions: What is the future of slaughtering and what consequences will this have for the butcher's trade? How can slaughtering serve as an advocate for sustainability?
