The search for new sources of human nutrition is becoming increasingly important. A new trend is the use of insects as food. Lemitec has been working with proteins of plant origin for many years and is now turning its attention to insects as a source of protein.

Insects as raw material for protein-rich food

As part of the project, a project group from the field of food process engineering is investigating the current status of the use of insects as food and is addressing the following questions, among others: What products are available on the market? Which insects are available as raw materials? Do products enriched with insect meal offer added nutritional value? What points need to be considered in terms of food law and safety?

In a practical part, the project group itself produces food enriched with insect meal, whose appearance, texture, smell and taste are convincing. Care is taken to ensure that the products developed could also be produced economically on an industrial scale.
