To carry out the research project "Microbiological Quality of Vegan Products" at the Vetmeduni Vienna, by Prof. Dr. Karin Schwaiger, the Adalbert-Raps-Stiftung is seeking input from start-ups and companies that produce vegan meat, egg and dairy substitutes.
Input sought: study on the microbiological quality of vegan products
Problem Statement:
Vegan meat, egg and milk substitutes are becoming increasingly popular. However, there is insufficient data on the product-typical microbiota of these products. Proof of their harmlessness to health has yet to be provided.
Target:
Insightful data on the microbiological quality of meat, egg and dairy substitutes for food manufacturers, food monitoring and retail - to identify potential challenges as well as optimal production processes.
Procedure:
Microbiological and molecular biological characterization of meat, egg and milk substitutes based on various vegetable raw materials with regard to relevant microbial groups: general microbiological quality, pathogens/ zoonotic agents, toxin formers, spoilage agents and spore formers.
We are therefore looking for:
Start-ups and companies that produce vegan meat, egg and milk substitutes and would like to support the research project with their know-how and gladly also with raw material and product samples.
